Hatsuhagi
The bush clover (hagi), which adds graceful color to the autumn fields, is beautifully expressed in this confection.
The white dough (kneaded white bean paste, *gyuhi and yam) is lightly tinted with pale green, capturing the image of flowers gently swaying in the autumn breeze.
Filled with smooth azuki bean paste, the top is delicately dusted with fine powder shaped like small bush clover blossoms, made from glutinous rice flour.
*gyuhi is type of mochi made from glutinous rice flour.
