In peach cultivation, thinning is done to reduce the number of fruits, allowing the remaining peaches to grow larger and sweeter. The young peaches picked during this process are gently simmered in syrup with wasanbon sugar. They have a crisp texture and can be enjoyed all the way down to the seed.
