Shiomame Daifuku
"Hikotaro mochi" glutinous rice from Yamagata Prefecture is carefully pounded to make the casing of this mochi. The mochi casing is then inlaid with salted akaendo, or red peas, harmonizing with the sweetness of the smooth azuki bean paste.
The light saltiness and sweet flavor of the beans help bring out the depth of flavor of the mochi.
