Wrapped in brilliant hues of blue-purple, red-purple, and translucent crystal, this confection features gyuhi (type of mochi made from glutinous rice flour) enveloped in smooth white azuki bean paste, all encased in kingyoku.
Kingyoku is a confection made by simmering agar jelly with sugar and malt syrup, then pouring and setting it to firm.
It evokes the pure and delicate beauty of hydrangeas, which bloom gracefully during the rainy season.
Lightly chilling it before serving is also recommended.
