Wakaayu

A baked confection inspired by the sweetfish (ayu) gliding gracefully through the clear rivers of early summer.

Each one is hand-baked by artisans using gently sweet castella dough filled with soft gyuhi (type of mochi made from glutinous rice flour). The gills are carefully shaped, and a branding iron is used to add charming facial details.
