Genmai Mochi
This confection consists of mochi made with "Hikotaro mochi " glutinous rice from Yamagata Prefecture and sarashi-an.
Sarashi-an is powdered dried azuki bean paste, made by drying and finely milling azuki beans.
The mochi is generously filled with whole azuki bean paste and lightly dusted with brown rice flour.
